Buffalo Pâté

  • 1 lb bison liver

  • 1 large onion

  • 2 cloves garlic

  • 1 very small finger of turmeric (optional - adds unwanted color but nice flavor)

  • 1 small finger of ginger

  • 1/2 cup butter

  • 1/4 cup cognac

  • 5 springs fresh thyme

  • Pepper

  • 2 Tbs homemade Greek yogurt

Saute onions, turmeric, ginger, and thyme. When they are almost done add diced garlic, and lay liver slices atop. Cook through and sprinkle cognac. Stir and cook off alcohol for several minutes. Process in food processor and add greek yogurt (optional). Refrigerate.
